Healthy Apple and Oat Breakfast Cookies

A classic chewy oat cookie given a healthy twist and loaded with oats, grated carrot, apple and sultanas. We created these breakfast cookies for those busy days when you need something quick and healthy for the road, whether it’s breakfast, morning tea or an afternoon snack. Simply brew your favourite Nerada tea in your keep cup, then grab and go!

Ingredients 

  • 130g rolled oats
  • 130g grated Granny Smith apple
  • 100g grated carrot
  • 40g sultanas
  • 1 egg
  • 50g light olive oil
  • 1/2 tsp cinnamon
  • 50g wholemeal self-raising flour
  • 50g maple syrup
  • 20g caster sugar

 Method

  1. Place all ingredients in a bowl and mix well. Line a baking tray with baking paper. Using an ice cream scoop, scoop dough into large cookies (about 2 tbs dough per cookie). Place on tray and chill for 20 minutes to firm up.
  2. Preheat oven to 170ºC. Press down gently on cookies to create a cookie shape, and bake for 25 minutes. Allow to cool on the tray – cookies will firm once cooled.

Makes 10-12 cookies
