Festive Gingerbread Recipe

Nothing beats a great gingerbread recipe and this one is fool-proof. It’s great to make with the family for Christmas and you can decorate them too if you like. You also can buy different cookie cutters in Christmas tree and Santa shapes to really get into the festive spirit. You could also try your hand at a gingerbread house and decorate it with candy canes, lollies and icing.

Ingredients

125g unsalted butter
1/3 cup brown sugar
1/4 cup golden syrup
1 egg
2 1/4 cups plain flour
1/4 cup self-raising flour
1 tablespoon ground ginger
1 teaspoon mixed spice
1 teaspoon bicarbonate of soda

Method

  1. Preheat oven to 180°C. Line two baking trays with baking paper.
  2. Beat the butter, sugar and golden syrup together in a bowl until creamy. Add the egg and beat well. Sift the flour, ground ginger, mixed spice and bicarbonate of soda together. Stir into the butter mixture. Turn out onto a lightly floured surface and knead lightly until smooth. Roll out to 5mm thick. Use cutters to cut out shape. Transfer to tray.
  3. Bake for 10-12 minutes until light brown. Transfer to a wire rack to cool completely.
