Camomile Flower

Whole camomile flowers look like what they are, small dried daisies, and loose leaf is the only format that shows them off. Steeped whole, they give more of the honeyed sweetness and less of the hay that comes from broken flower heads. A generous spoonful makes a pot that carries an evening comfortably. The flower heads are kept whole, so they need room in the pot and a little more time in the water, and the infusion pours a soft gold with no trace of bitterness.

Brew Time: 3 to 5 minutes
Water Temperature: 100°C
Best Enjoyed: Hot, late in the evening.
