Camomile flowers have been dried and steeped for a very long time, and they have always been favoured for the same thing, a soft honeyed sweetness with a faintly apple-like edge. Whole organic flowers go into this one, which is what keeps the infusion mellow instead of hay-like. It has a natural place at the end of the evening. Whole flowers take a little longer to open than a cut blend, so five minutes rather than three is worth the wait, and the infusion pours a soft gold with no bitterness in it at all.
