Lemon & Ginger

Ginger and citrus have been paired in hot water for centuries, and the reason is easy enough to taste. Here the citrus comes mostly from lemongrass and lemon myrtle, both long favoured for a lemon character that stays sweet rather than turning acidic in hot water, with a little lemon peel for lift. Ginger sits underneath and warms the whole cup. The pieces are cut fine for the bag, so the ginger gives its heat up quickly rather than needing a long steep, and the whole thing is naturally free of caffeine at any hour.
