Tie Guan Yin

Tie Guan Yin has been made in Fujian Province, China, for centuries, and the method is what gives it its character: the leaf is rolled, partially oxidised and then lightly roasted, a sequence long treasured for the orchid aroma it draws out. Grown at 900 metres, this one opens floral and finishes on roasted nuts. Each infusion reads a little differently to the last. The roast is kept light, so the tea reads floral first and toasted second, and the leaf opens further with each pour rather than giving everything up at the start.
