Shou Pu-erh

Shou pu-erh is made by a controlled fermentation developed in Yunnan Province, China, to bring on in months the depth that once took decades of ageing. Grown at 1,700 metres and fermented in this way, the leaf loses its briskness entirely and gains a dark, mellow body that sits closer to coffee than to black tea in weight. It is a cup for the cold end of the year. The leaf is loose rather than pressed into a cake, so it needs no breaking up and gives a clean, dark liquor from the first pour.
