White Tea

Loose leaf is where white tea makes the most sense: the buds and leaves are large, downy and easily crushed, and they need room to open. This organic leaf is brewed below the boil, which has long been the way to hold on to its honeyed sweetness rather than drawing out the little astringency it has. The infusion stays pale and finishes clean. The leaf is large and easily crushed, so it is spooned rather than packed, and a warmed pot below the boil is what keeps the honey note in the cup.
