Nettle Leaf

Nettle has been gathered and dried for the pot for as long as it has grown wild, valued for a deep green, mineral flavour with more in common with a vegetable than a herb. Dried whole and steeped, the leaf gives a clear infusion with a savoury edge and a faintly sweet finish. It is a grounding cup rather than a bright one. The leaf is cut coarse and dried whole, which keeps the infusion clear rather than muddy, and it takes a full five minutes before the mineral note properly arrives.
