Licorice Root

Licorice root has been chewed and brewed for thousands of years, treasured for a sweetness many times that of sugar. Steeped on its own, the root gives a thick, faintly aniseed infusion with a sweetness that builds rather than hits. It lingers well past the last mouthful. The root is cut into small pieces rather than powdered, which keeps the infusion clear instead of cloudy, and a level spoonful is plenty, since the sweetness carries a long way on its own.
