Masala chai means spiced tea, and the masala here is the traditional four, ginger, cinnamon, cardamom and cloves, blended against a robust black base. Made properly with milk, it fills a kitchen. A heaped spoonful is the right measure, and it takes a longer steep than a plain black tea before the spice is fully out.
