Chai is a spice blend before it is a tea, and the four spices here have been used together for centuries: ginger for heat, cinnamon for sweetness, cardamom for perfume and cloves for depth. Blended generously against a robust black tea, they build a cup that is warming without turning sharp. It is the tea that makes a kitchen smell like something is happening. The spices are cut fine and sealed in the bag, so a single tea bag gives the same strength as a spoonful of loose blend, and the cup keeps building for the full five minutes.
