Rooibos takes vanilla better than almost any other leaf, because its own character is already warm and faintly sweet rather than tannic. Vanilla has long been valued for the way it rounds edges, and here it turns a plain red infusion into something closer to a dessert cup. Caffeine free, it is a habit that can be kept after dinner. The vanilla is blended through rather than sprayed on top, so the sweetness arrives with the body of the tea instead of ahead of it, and a bag left long simply gets rounder.
