Sencha

Sencha is the everyday tea of Japan, and Kagoshima in the south is where a great deal of it grows. The leaf is steamed within hours of picking, halting oxidation and giving the tea its characteristic fresh, vegetal profile, then rolled into fine needles. Brewed briefly, this organic sencha delivers a savoury, almost broth-like cup. Steaming also makes it unforgiving of a long steep, so a minute is genuinely a minute, and the leaf is good for a second and third pour after that.
