Genmaicha

Genmaicha began as a way of stretching tea with roasted rice, and it survived because the combination turned out to be delicious. Roasted brown rice has long been valued for the way it rounds out green tea, adding a toasted, savoury weight that softens the vegetal edge. This organic version keeps the two in even balance. The rice is roasted until it pops, which is where the popcorn note comes from, and the blend is brewed briefly and lightly so the grain never overtakes the leaf underneath it.
