Ceylon

Ceylon has been the name for Sri Lankan tea since the estates were first planted, and at 900 metres the leaf develops the brightness the island is known for. Grown organically and left unblended, this one runs crisp rather than heavy, with the clean citrus lift that has long made Ceylon the leaf of choice for iced brewing. It is as good cold as it is hot. The elevation is what keeps it bright rather than heavy, and the same clarity is why it stays clean over ice instead of clouding the way lower-grown black teas do.

Brew Time: 3 minutes, and worth re-steeping
Water Temperature: 100°C
Best Enjoyed: On its own and hot, or brewed strong and poured over ice.
