Jasmine Dragon Pearl

Jasmine scenting is a slow craft: green tea is laid with fresh jasmine blossom over successive nights until the leaf has taken the fragrance, and the flowers are then removed. Here the leaf, grown at 1,000 metres in Guangxi Province, China, is hand-rolled into pearls, so each pearl unfurls in the cup and gives up its scent gradually. It is a tea worth watching as it opens. The pearls are rolled tightly enough to sink, then open slowly over three or four minutes, which is why the fragrance builds rather than arriving all at once.
