Hibiscus Flower

Hibiscus is grown and dried for brewing right across the tropics, where it has long been valued as much for its colour as its flavour. On its own, with nothing to soften it, the infusion turns properly tart, closer to cranberry than to citrus, and a deep ruby right through the glass. The colour holds even over ice. The flowers are cut coarse rather than powdered, so the infusion pours clear rather than cloudy, and a generous spoonful will carry a jug of iced tea without any dilution.
