First flush is the season's first picking, taken from the Darjeeling gardens in the weeks after the bushes wake, and it has long been treasured as the most aromatic tea of the year. At 1,500 metres the leaf grows slowly, and the cup that results is pale, floral and closer to a green tea in weight than to a breakfast black. It comes around once a year. Because the leaf is barely oxidised, it is brewed a little below the boil and drunk without milk, which is the only way the grape and rose notes survive the cup.
