Hibiscus has been brewed across the tropics for centuries, valued as much for its deep ruby colour as for a tartness that sits somewhere near cranberry. Lemongrass softens that edge and adds a clean citrus top note, and the two are generously proportioned here so the infusion keeps both its colour and its bite over ice. It is a jug that disappears quickly in summer. Hibiscus makes up the larger share of the blend, which is where the ruby colour comes from, and it holds that colour and its tartness over ice for a full jug.
