Baihao Silver Needle

White tea is the least handled of all the tea types. The buds are picked, withered and dried, and almost nothing else is done to them. Baihao Silver Needle takes only the downy buds, grown at 1,800 metres in the mountains of Yunnan Province, China, which is why the cup runs so pale and so sweet. The result is a silky infusion that tastes fuller than it looks. Only the spring buds are taken, which is why the yield is small and the pouch is too, and the infusion runs pale gold with no astringency to speak of.
