Lemon myrtle, a classic Australian native, has long been favoured for a sweet lemon flavour without the acidity of citrus, which lets it sit brightly against a strong black tea rather than cutting through it. Our Australian Breakfast is generously proportioned with it, so the first cup of the day arrives lively and clean, and holds its character through a second pour. The black tea is cut fine enough to give colour quickly, which keeps the myrtle from running ahead of the tea, and it stands up to milk if that is how the morning goes.
