Barbecues are a true blue way to celebrate Australia Day and lamingtons are an ideal make-ahead dessert to serve. No one wants to be stuck in the kitchen with the oven on baking a sponge, so we’ve taken a leaf out of Donna Hay’s book and used a store-bought cake for our lamingtons.
INGREDIENTS
- 1 x 20cm x 30cm store-bought sponge cake
- 3¼ cups icing sugar
- ½ cup cocoa powder
- ⅓ cup boiling water
- 75g butter, melted
- 2 cups desiccated coconut
- Cut the sponge cake into 15 squares.
- Sift together the icing sugar and cocoa. Mix with the boiling water and melted butter.
- Place the desiccated coconut in a bowl. Using 2 forks to hold the sponge squares, dip into the chocolate mixture and coat in the desiccated coconut. Allow to set on a wire rack.
